I've only just discovered these great
food science public lectures put on by Harvard University available on iTunes. I highly recommend them if you're interested in the hows and whys of food prep, they have great guests such as
Harold Mcgee,
Joan Roca, and
Wylie Dufresne.
I found out about the lecture on the latest
cooking issues radio show, and the latest has Dave Arnold (from CI) and
Harold Mcgee.
